Cooking With Essential Oils – Cinnamon Muffins

Mmmmmmm…..cinnamon muffins!!!  Make them healthier with pure essential oils! Here is a great recipe!

Cooking With Essential Oils

For the Muffin batter, you will need:

  • 1/2 cup of vegetable oil ( I use organic!)
  • 1 cup of milk (low fat is good)
  • 1 1/2 cups of sugar (I use Sugar In The Raw)
  • 1 tsp salt (I use Pink Himalayan)
  • 2 eggs, beaten (organic brown)
  • 3 cups of flour (for gluten free muffins use Gluten Free Rice Flour)
  • 1 Tbsp baking powder
  • 2 drops of Cassia essential oil

For the Topping, you will need:

  • 1/2 cup of brown sugar
  • 2 tsp cinnamon
  • 2 Tbsp flour
  • 2 Tbsp butter, softened

Preheat your oven to 375 degrees

Batter: Combine all ingredients in a medium-sized bowl, and stir until well combined. Pour batter into greased muffin tins or pan, filling each tin about 3/4 full

Topping: In a small bowl, combine brown sugar, cinnamon, flour and butter. Spoon topping evenly over muffins

Bake muffins for 12-16 minutes or until you can insert a toothpick in the middle and it comes away clean
